BANANA CHOCOLATE CHIPS MUFFIN



Just when i was feeling so happy with lukman and his twin brother being at home...rahim had to go back to his college in Melaka.

That was his first trip by train to KL where his other twin and the sister will be waiting for him there. He'll then be taking a lift to Melaka by a car of a college mate.

Usually it's either we send him or we get someone to drive him over. We wanted to...but my hubby is not in the best of health. It's not like we're so overprotective but upon hearing so many accidents occured i'm kinda worried... what more when taking the express bus.

Though at first he looked uncertain...i'm sure after awhile he'll be enjoying the train ride!

Hiya...what can i say...having a mum like me!

Dont know what i'll do if any of my children were to study or work abroad....

Love is always making sure your loved ones are taken care of and being loved!

Maybe i'm used to looking over my shoulder for them...n i'm everything for them!

Well...soon when they have families of their own...pandai-pandailah they make their own way...

So each time when i'm feeling lonely... i'll fill it up with either sewing, gardening or cooking/baking.

So i decided to make some muffins... cos i know it's the favourite of my youngest son lukman!

But on the other hand...i wish rahim is here to enjoy it too... sigh!

That i guess will have to wait till June when he'll be back for a longer semester break.

Banana Chocolate Chips Muffins

Ingredients

60 g butter
2 cups self-raising flour
1/2 cup castor sugar
1/2 cup milk
2 eggs
2  or more ripe bananas,mashed
1 cup dark choc bits

Method

1.Preheat oven to 200c. Line muffin with paper 
  cases.
  Melt butter in a small saucepan. Set aside    
  to cool.
2.Sift flour into a mixing bowl. Stir in      
  sugar. Make a well in the centre of dry    
  ingredients.
3.Lightly beat milk, eggs & butter. Add to dry
  ingredients along with mashed banana. Gently 
  mix ingredients until just combined. Stir in 
  choc bits. Dont beat the mixture or the 
  muffins will be tough.
4.Spoon the mixture evenly into the muffin 
  cases. Bake for 20 min or until firm on
  touched. Leave to cool.

  2. I do to before...but now everyone of them dh out of the house either to work or to study. Mula tu memang depress sgt. but i've overcome it. Always looking forward for weekends or semester break for them to come back home!

  4. Alhamdullilah u dh ok!
    Selaulnya i guna low fat milk tapi bila dh habis ambik je la yg ada...susu cair.
    Memang la sedap tapi fattening.

    1. ok, tapi belum 100% ok, kalau tidur nak kalih2 tu sakit juga... buat kerja yg ringan2 je...

      I pun sama... ambik mana yg sempat je... tp kalau buat kek coklat selalunya guna susu cair... sebab anak-anak komplen kalau guna susu segar depa kata tak sedap.... entahlah... i kekadang baking je tpi tak makan kek-kek tu sume... bukan takut gemuk ke apa... tp dah tua-tua ni mcm2 pantangnya...

    Bila lah saya nak tergerak hati nak membaking ye huhu, oven tu dok jadi gajah putih dah lama dahhhh...

  6. Ate anak bongsu teman ade kat rumah....kene le buat kudap2 sikit. Sian kawan bile balik romah tak de ape nak minum petang...hehehe!
    Tak pe Yong...esok cuti hari buruh...bukak recipe book...tengok N BUAT KEK utk orang romah!
